Artikaas Gouda Cheese - Aged 8 Months

First made by the Cistercian Monks at Jervaulx Abbey in Wensleydale, using milk from their herds, this cheese is now produced according to a time honored traditional recipe. It's full creamy flavor offers a clean, lemony tang which tends to sharpen with age. Firm and flaky, but not by any means dry, this pasteurized cow's milk Wensleydale is fragrantly sweet and perfectly paired with fresh fruits such as pears, grapes, and apples.

This is a very special smoked cheese. Unlike some other smoked cheeses, our Naturally Smoked Dutch Gouda is not a processed cheese with an artificial smoked flavor added to the rind. Rather, it is a natural cheese with a very creamy and characteristic smoke flavor from cold smoking over real oakwood chips. No artificial ingredients, flavoring or processing are used! It is a creamy, smooth, mellow and lightly smoky cheese that slices well and melts beautifully.

Boschetto al Tartufo Bianchetto is about as amazing as a cheese gets. Our friends at Il Forteto, in Mugello, have now created another outstanding version, aged for four months. Stagionato is made from pure sheep's milk. The master cheese maker at Il Forteto has still maintained a precious harmony between the pronounced, pungent taste of the extremely scarce (and expensive) white truffle and pure sheep's milk. The scent and flavor will still bowl you over with delight.

Sweet, creamy, and mild, our Danish Fontina is a gentle alternative to the Italian original. While not having the pungent smell of the Italian version, this cheese is still perfect for melting over vegetables, into cream sauces for pasta, or baked into homemade cheese bread.
